I scream, you scream, we all scream for ice cream … except store-brought brands can contain fillers and ingredients with names you don’t even recognize.
Yuck. Instead of skipping this seasonal treat altogether, try making your own plant-based, vegan version using avocado – yes, really!
You shouldn’t save this superfood just for toast and guacamole. Avocado is in season now and chock full of vitamins and nutrients like potassium (something most people don’t get enough of), Vitamin K and Vitamin C. Plus, avocado is loaded with fiber, powerful antioxidants and monounsaturated fatty acids that help keep your heart healthy.
So, what are you waiting for? The recipe is so easy we don’t even really like calling it a recipe — and you can use whatever you have on hand. All you need is an avocado, a creamy base (like coconut milk), something sweet (like agave nectar or honey) and a pinch of salt. If you’re craving extra flavor, add some lime juice or vanilla extract, or mix in chocolate chips or strawberries. Um, yum!
Once you’ve chosen your ingredients, simply blend and freeze for at least 4 hours, stirring every hour. The last step is the easiest of all: Grab a bowl and enjoy this surprisingly delicious plant-based treat.
Tip: When it’s time to clean up, fill your blender pitcher halfway with hot water and add a drop of Home Made Simple Dish Soap. Then turn on the blender (holding the lid down with a towel), and let it run for 10 seconds. Rinse out thoroughly with hot water and voila – a perfectly clean blender in under 30 seconds.
