One-Pot Veggie Pasta

Laila whips up an easy, healthy meal that doesn’t require a sinkful of pots and pans to make.

Ingredients
12 oz package uncooked penne pasta
1 yellow onion, chopped
3 cups fresh baby spinach
1 can diced tomatoes
1 yellow bell pepper, chopped
2 tablespoons tomato paste
1 tablespoon Super Sassy Seasoning
3 cloves garlic, sliced
½ tablespoon red pepper flakes, or to taste
4 cups vegetable broth
1 cup water
4 oz crumbled feta
6 leaves fresh basil, torn
Salt and pepper to taste

Materials Needed
Large pot or Dutch oven

Steps
  1. Place all ingredients in pot except feta and basil, and stir to combine
  2. Cover and bring to a boil
  3. Remove lid and reduce heat to medium
  4. Continue to cook for about 15 minutes until the pasta is soft and liquid is reduced to a creamy sauce
  5. Add crumbled feta, fresh basil and salt and pepper to taste. Stir and serve

Cooking Tip: Save your tears while cutting onions! Chill the onion in the refrigerator before slicing, and be sure to use a sharp knife.
