Filipino Pancit with a Twist

Laila teaches the boys to cook one of Yaya’s favorite recipes, but with a “Laila” twist.

Ingredients
1 lb uncooked pancit noodles (Note: We are using traditional noodles for this recipe, but you can use any of your favorite noodles for the dish.)
1 lb uncooked vermicelli noodles
1 cup cabbage, thinly sliced
1 cup carrots, julienned
1 cup bell peppers, thinly sliced
½ cup green onions, cut into 2" strips
1 lb chicken breast, cut into small pieces
2 tablespoons olive oil
1 small onion, thinly sliced
1½ tablespoons soy sauce
4 cloves garlic, crushed
½ teaspoon turmeric
½ teaspoon black pepper
2 cups chicken broth
4 cups water
1 lime

Materials Needed
Medium bowl
Wok
Wok spatula

Steps
  1. Soak the vermicelli in water for about 5 minutes, or until soft
  2. Soak the vermicelli in water for about 5 minutes, or until soft
  3. Brown the chicken in the olive oil with the soy sauce, pepper, turmeric, garlic and onion
  4. Add the vegetables and cook for 5 to 10 minutes
  5. Add the chicken broth and water to the chicken, and bring to a low simmer
  6. Add uncooked pancit noodles and soaked vermicelli
  7. Simmer over low heat until the noodles soak up all the broth
  8. Serve with a squeeze of lime on top

Cooking Tip: Peeling garlic can get a little tedious, and smashing it with a knife isn’t kid-friendly. Instead, roll a canned good over the garlic and press down lightly to crack the garlic skin shell. Then pull off the skin.
