Ingredients
1 tablespoon olive oil
1 lb ground turkey (dark meat)
1½ tablespoons Laila’s Taco Seasoning Blend (see below)
(1) 10 oz can tomatoes and green chiles, drained
1½ cups shredded Mexican cheese blend
24 wonton wrappers
Cooking oil spray
Salt and pepper to taste

Laila’s Taco Seasoning Blend Ingredients
1 tablespoon chili powder
1½ teaspoons paprika
2 teaspoons ground cumin
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon ground turmeric
¼ teaspoon ground cayenne (optional)
1½ teaspoons sea salt, or to taste
¼ teaspoon freshly ground black pepper

Optional Garnish
Sour cream
Black olives
Chopped cilantro

Steps

  1. Preheat oven to 375 F
  2. Heat olive oil in a large pan on medium heat. Add ground turkey and taco seasoning. Cook until meat is browned, about 6 to 7 minutes. Add tomatoes and chiles, and stir until combined. Remove from heat
  3. Generously spray a standard-size muffin pan with cooking oil spray. Add a wonton wrapper to each muffin tin
  4. Put about 1 tablespoon of the taco meat mixture in each cup. Next, top them all with 1 tablespoon of cheese. Repeat this step, ending with a layer of cheese on top
  5. Place the muffin pan in the oven and bake at 375 F for 10 to 12 minutes or until the edges are crispy and golden
