A+ Mac and Cheese and Secret White Sauce

Ingredients
Sea salt
16 ounces macaroni
1 large egg
1 cup whole milk
1 cup Secret White Sauce (see below)
½ teaspoon onion powder
¼ teaspoon paprika (optional)
¼ teaspoon freshly ground black pepper
¼ teaspoon ground turmeric (optional)
1 pound sharp cheddar cheese, coarsely grated (about 6 cups)

    Steps
  1. Preheat the oven to 375 F
  2. Meanwhile, bring a large pot of water to a boil and salt it. Add the macaroni and cook until al dente according to the package directions
  3. Drain and return to the pot
  4. In a large bowl, whisk the egg with the milk and Secret White Sauce. Then whisk in 1 teaspoon salt, the onion powder, paprika (if using), the pepper and the turmeric (if using)
  5. Add the liquid mixture and 4 cups of the cheese to the macaroni while it is still hot. Mix well to fully coat it
  6. Transfer the mixture to an 8" × 11" baking dish and sprinkle the remaining 2 cups of cheese over the top
  7. Bake for 25 to 30 minutes, until bubbling hot and browned in spots. Let sit for 5 minutes, and then serve

Secret White Sauce

Makes: 3 cups
Prep Time: 5 minutes
Cook Time: 15 minutes
Difficulty: Easy

Ingredients
2 cups Basic Bone Broth or No-Sweat Vegetable Broth
½ medium-head cauliflower, cut into florets and stems chopped
1 medium zucchini (about 8 ounces), peeled and coarsely chopped
Sea salt

    Steps
  1. Pour the broth into a large sauté pan or high-sided skillet. Bring to a simmer over medium-high heat
  2. Add the cauliflower, return to a simmer and then reduce the heat to medium and cook for 5 minutes
  3. Add the zucchini and cook for 10 minutes, or until both vegetables are very soft. Drain
  4. Transfer the vegetables to a blender, add the broth, season with salt and blend until very smooth
