    Creating a unique side dish for the family is simple. With just a little bit of preparation and a pre-heated oven, you can serve up a sweet and savory treat that is anything but ordinary.

Sweet Potato Fries
Serves 4
Prep time: 15 minutes
Cook time: 20-30 minutes

INGREDIENTS
Non-stick cooking spray
2 large sweet potatoes
2 teaspoons olive oil
1 teaspoon dried thyme
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Tip: For a spicy kick, add 2 teaspoons each of cumin, cinnamon and chili powder.

INSTRUCTIONS
1. Preheat oven to 400°F. Line a baking sheet with foil and coat with non-stick cooking spray.
2. Cut sweet potatoes in half, lengthwise, and place flat side down on a cutting board. Slice into 1” wide wedges.
3. In a large mixing bowl, toss potatoes with olive oil, thyme, salt and pepper.
4. Lay the potatoes, cut side down, on prepared baking sheet and place on the bottom rack of the oven.
5. Once potatoes begin to soften, about 15 minutes, flip them over. Continue cooking for an additional 10 to 15 minutes, or until potatoes begin to brown.
6. Loosen from the pan with a spatula and serve warm.

Tip: Serve fries with curry ketchup or lemon mayo for dipping!
