    Turn regular cornbread muffin mix into a spicy, savory treat with spicy ground sausage and cheese. Pair it with a bowl of piping hot soup to make it a simple, filling meal.

Stuffed Cornbread Muffins Recipe

Serves 6
Prep time: 10 minutes
Cook time: 10 minutes
Bake time: 18-20
You’ll need: 1 muffin tin

INGREDIENTS
1 package instant cornbread muffin mix
1 cup shredded sharp cheddar cheese
1/4 cup cottage cheese
1/2 pound spicy pork sausage, ground
1/2 yellow onion, diced
2 teaspoons spicy seasoned salt
2 teaspoons Cajun seasoning
1 tablespoon butter, softened

Tip: Make these muffins vegetarian by substituting spicy vegan sausages for the pork.

INSTRUCTIONS
  1. Preheat oven to 375°F, and line a muffin pan with muffin cups.
  2. Prepare cornbread muffin mix according to package directions. Add cheddar and cottage cheese, then mix thoroughly to combine. Set aside.
  3. In a medium-sized mixing bowl, combine ground sausage, diced onion and spices.
  4. Melt butter in a skillet over medium-high heat, then brown the sausage mixture until cooked through.
  5. Fill muffin cups halfway with cornbread batter, then add a spoonful of the pork mixture to each. Cover with more batter until each cup is filled.
  6. Bake until muffins are puffy and browned, about 18-20 minutes, and until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow to cool for ten minutes, then serve.
