Southwestern Sloppy Joes

    Add color, texture and flavor to this standard sandwich with simple southwestern ingredients like black beans, green peppers and yellow corn. Sweetened with a dash of brown sugar and finished with a splash of Worcestershire sauce, it’s our favorite dinner sandwich.

Southwestern Sloppy Joes 
Serves 5-6
Prep time: 10 minutes
Cook time: 10 minutes

INGREDIENTS 
1 tablespoon canola oil
1 yellow onion, chopped
1/2 green bell pepper, chopped
2 cloves garlic, minced
1/2 can (7-8 ounces) black beans
1 can (15 ounces) corn, drained
1 pound lean ground beef
1 can (16 ounces) tomato sauce
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
Hamburger buns, toasted

INSTRUCTIONS
  1. In a large skillet over medium-high heat, sauté onion, bell pepper and garlic in canola oil until tender and fragrant, about 8-10 minutes.
  2. Gently fold in beans and corn, then add ground beef. Cook, stirring occasionally, until meat is browned, about 10 minutes.
  3. Add tomato sauce, brown sugar and Worcestershire sauce. Simmer for 20 minutes or until desired thickness is reached. Season with salt, then serve on toasted buns.
