Seared Lemon Tuna over Mixed Greens

    When it’s delicately seasoned and flash-seared, yellowfin tuna practically melts in your mouth. For a quick, nutrient-rich meal, serve it atop a crisp salad tossed with homemade vinaigrette.

Seared Lemon Tuna over Mixed Greens
Serves 4
Prep time: 10 minutes
Cook time: 5 minutes

INGREDIENTS
2 (6 ounce) yellowfin tuna steaks*
1/2 cup soy sauce
1 lemon, juiced
1/2 teaspoon cayenne pepper
1 tablespoon sesame oil
2 tablespoons olive oil
1/2 red onion, thinly sliced
1 cup cherry or grape tomatoes, sliced in half
Sea salt, to taste

*Tip: Yellowfin tuna, often labeled as “ahi” tuna, is a firm and mild fish with meaty, deep red flesh. For the best flavor and texture, serve it rare to medium rare.

INSTRUCTIONS
    1. Brush tuna steaks with soy sauce and 1/2 the fresh-squeezed lemon juice, then sprinkle with cayenne pepper.
    2. Heat sesame oil in a skillet over medium-high heat. Sear tuna steaks for 2 minutes on each side. Remove from pan and set aside.
    3. In a large bowl, make the dressing. Whisk together olive oil, remaining lemon juice and sea salt to taste.
    4. Toss dressing with mixed greens, red onion and tomatoes.
    5. Slice tuna diagonally against the grain. Plate mixed greens and fan a few slices of tuna on top.
