Look for pistachios with split beige-colored shells (which indicate ripeness) and bright green nuts. They’re highly perishable, so put shelled or un-shelled nuts in a plastic bag and refrigerate for up to 3 months or freeze un-shelled nuts for up to 6 months.
How to Candy Pistachios
Mix 1/2 cup light corn syrup, 1/3 cup sugar and 1 1/2 teaspoons salt, then stir well. Toss with 16 ounces pistachios until well-coated, then spread on a parchment paper-lined baking sheet and bake in a 325°F oven until fragrant, about 10-15 minutes. Let cool and store in an airtight container.
