Peachy Oat Bran Muffins

    We've all obviously heard that the answer for a healthy diet is to lower your fat intake, and that means losing some flavor. But it doesn't have to be that way. Here's a recipe to help you cut the fat, but keep the flavor.

Prep Time: 12 minutes
Cook Time: 25 minutes
Servings: 12 muffins

Make a batch of these low-fat muffins and keep them on hand for healthy breakfasts all week long.

INGREDIENTS

1 1/2 cups of oat bran
1/2 cup flour
2/3 cup firmly packed brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup skim milk
1 egg, beaten or 2 eggwhites, beaten or ¼ cup egg substitute
1/4 cup apple sauce
1 can (15 oz.) DEL MONTE® Lite Yellow Cling Sliced Peaches, drained and chopped
1/4 cup, raisins

INSTRUCTIONS

  1. Combine oat bran, flour, sugar, baking powder, cinnamon and salt; mix well.
  2. Combine skim milk, egg or egg whites and applesauce. Add to dry ingredients; stir just enough to blend. Fold in fruit and raisins.
  3. Fill greased muffin pans to top. Bake at 425°F, 20 to 25 minutes or until golden brown.
