Basic Granola Recipe

Makes about 5 cups
Prep time: 10 minutes
Bake time: 30-45 minutes

INGREDIENTS
3 cups rolled oats
1 1/2 cups roughly chopped nuts and seeds
1-2 teaspoons ground cinnamon (or spices of your choice)*
1 teaspoon salt
1/4 cup packed light brown sugar
1/4 cup honey or maple syrup
1 tablespoon vanilla extract
1/4 cup vegetable oil, canola oil or olive oil
1 cup total dried fruit, chocolate chips and other fixings

*Tip: For brighter flavor, substitute fresh citrus zest for the spices.

INSTRUCTIONS
1. Line a baking sheet with parchment paper or a silicone baking mat.
2. In a large bowl, combine oats, nuts, cinnamon and salt, then mix well. In a smaller bowl, whisk together brown sugar, honey, vanilla and oil.
3. Pour wet mixture over dry mixture and with clean hands, toss until oats are thoroughly coated.
4. Spread granola evenly on prepared baking sheet, place in the oven and set temperature to 300°F (no need to preheat!). Bake for 30-45 minutes, stirring every 10 minutes, until browned to your liking. Keep in mind that it will crisp up as it cools.
5. Let cool on the baking sheet, then stir in dried fruit, chocolate or other fixings.
6. Store in an airtight container at room temperature for up to one month.
