French Toast Recipe

Serves 4-8
Prep time: 25 minutes
Cook time: 16 minutes
You’ll need: 13x9” baking dish, wire rack, baking sheet

INGREDIENTS
8 slices thick white sandwich bread*
1 1/2 cups whole milk, warmed**
3 egg yolks
3 tablespoons light brown sugar
1/2 teaspoon cinnamon
4 tablespoons unsalted butter, divided
1/4 teaspoon salt
1 tablespoon vanilla
Maple syrup, to taste

*Tip: Make French toast with homemade pumpkin bread or lemon poppy seed bread. Add raisins, cranberries, dates, pecans, walnuts or almonds into the batter for an extra special touch.

**Tip: Prevent butter from clumping by heating the milk in a microwave until warm to the touch.

INSTRUCTIONS
  1. Adjust oven rack to middle position and preheat oven to 300°F.
  2. Place bread on wire rack set in a rimmed baking sheet, and bake until almost dry, about 16 minutes. Turn the slices halfway through baking.
  3. Remove bread from rack and let cool 5 minutes. Return baking sheet with wire rack to oven and reduce temperature to 200°F.
  4. Whisk milk, egg yolks, sugar, cinnamon, 2 tablespoons melted butter, salt and vanilla in large mixing bowl to combine. Transfer to 13x9” baking dish.
  5. Soak both sides of a bread slice in the milk mixture until saturated, but not soggy.
  6. Using a slotted spatula, remove the bread and allow excess mixture to drip off, then set aside on a platter.
  7. Repeat with remaining slices.
  8. Heat 1/2 tablespoon butter in skillet over medium-low heat.
  9. Add 2 slices soaked bread to skillet and cook until golden brown, 3 to 4 minutes.
  10. Flip and continue to cook until second side is golden brown, 3 to 4 minutes longer.
  11. Transfer cooked slices to baking sheet in oven to keep warmed.
  12. Wipe skillet with paper towels, and repeat cooking with remaining bread, 2 slices at a time. Add 1/2 tablespoon of butter for each batch.
  13. Serve warm with maple syrup.

Serving Tip: Cut into sticks and serve with dippers—maple syrup, cream cheese frosting, strawberry jam, sweetened whipped cream and chocolate syrup.
