    For a hearty and healthy dinner in minutes, give a family favorite an unexpected twist. Brush grilled dough with barbecue sauce, then pile it high with fresh veggies and cheese to create a wholesome and flavorful pizza.

Barbecue Veggie Pizza
Serves 6
Prep time: 40 minutes
Cook time: 10 minutes

INGREDIENTS
2 tablespoons butter
1 red onion, thinly sliced
1 cup mushrooms, sliced
Extra virgin olive oil, for brushing
1 pound pizza dough, store-bought or homemade
1/2 cup barbecue sauce
1 jar (12 oz.) marinated artichoke hearts, drained and sliced
1 red bell pepper, thinly sliced
1 Roma tomato, thinly sliced
1 green zucchini, thinly sliced
1/2 cup Manchego cheese*, grated
1 cup fresh basil leaves
Sea salt, to taste

*Tip: Manchego is a sweet and buttery Spanish cheese. Feel free to substitute Mozzarella or Monterey Jack.

INSTRUCTIONS
    1. Melt butter in a skillet over medium heat. Add onion and sauté for 20-30 minutes, until caramelized. Add mushrooms and sea salt, then cook until tender, about 10-15 minutes. Set aside.
    2. Preheat your grill. Clean off the grates and lightly brush them with olive oil, then reduce heat to medium.
    3. Coat 2 cooking trays with olive oil. On a well-floured surface, spread and flatten dough with a rolling pin, being sure not to overwork it. Brush with olive oil, then sprinkle with sea salt. Flip it onto the prepared cooking tray, then brush and season the other side.
    4. Grill dough for 1 1/2 minutes, then flip. Brush with barbecue sauce, then top with caramelized onions and mushrooms, bell pepper, tomato, zucchini and cheese. Cover the grill and cook over high heat until cheese melts, about 1 minute. Garnish with basil leaves.
