    For a quick and easy dinner, brush grilled chicken with a homemade apricot glaze. Made with simple, budget-friendly ingredients, it’s full of bold flavors, from sweet and spicy to salty and tangy.

Apricot-Glazed Chicken
Serves 2-4
Prep time: 5 minutes
Cook time: 10 minutes

INGREDIENTS
1/2 cup apricot preserves
1 tablespoon soy sauce*
1 tablespoon brown sugar
1 tablespoon spicy brown mustard
1 1/2 pounds skinless, boneless chicken thighs
Olive oil, for brushing
Sea salt, to taste

*Tip: Keep a bottle of soy sauce in your pantry—it's a great go-to ingredients for dipping sauces, glazes, and marinades.

INSTRUCTIONS
    1. Preheat grill to medium heat. In a medium bowl, whisk together apricot preserves, soy sauce, brown sugar and mustard to create a glaze.
    2. To prevent sticking, lightly brush grill grates with olive oil. Sprinkle chicken with sea salt, then transfer to the grill.
    3. Cook for 5 minutes, then flip. Brush with apricot glaze, then flip again. Glaze the other side and cook for another 2 minutes. Flip one more time and cook for an additional 2 minutes, or until the chicken is firm to the touch.
Tip: When grilling meats, be gentle. To prevent your cuts from drying out, avoid pressing them into the grates, which squeezes out all the flavorful juices.
