    Homemade Macaroni & Cheese is simple, scrumptious and kid-friendly. Add shrimp for a fresh and healthy take on this family favorite.
Shrimp Macaroni and Cheese

Shrimp Macaroni &Cheese 
Serves 6
Prep time: 20 minutes
Cook time: 15 minutes

INGREDIENTS 
1 pound elbow macaroni
2 tablespoons unsalted butter
1/4 cup all-purpose flour
3 cups skim milk
2 cups shredded cheddar cheese
1 1/4 cup grated Parmesan cheese
1 pound frozen shrimp, chopped and cooked
1/2 cup panko pread crumbs
2 tablespoons fresh parsley, chopped
Salt and freshly ground black pepper, to taste

INSTRUCTIONS
  1. Preheat oven to 400°F. Bring a large pot of salted water to a bowl, then stir in pasta and cook according to the directions, until al dente.
  2. Melt butter in a large saucepan over medium heat. Add flour and cook for one minute, stirring constantly. Add milk, then whisk gently until smooth. Bring mixture to a boil, then reduce to a simmer and cook for 5 minutes, or until the sauce has thickened. Season with salt and pepper.
  3. Place strained and cooled macaroni in a 9"x13" baking dish. Pour the sauce over the macaroni and mix well with a wooden spoon. Stir in cheddar cheese, 2 cups Parmesan cheese and shrimp.
  4. Sprinkle with remaining Parmesan cheese, panko bread crumbs and parsley. Bake for 15 minutes.
Tip: Experiment with other pasta shapes, like shells, penne and ziti. Or mix them together for a fun look and texture the kids will love!
