Shredded Chicken Sliders with Cherry Chipotle Barbecue Sauce

Serves 4-6
Prep time: 15 minutes

INGREDIENTS
Barbecue Sauce
3/4 cup prepared barbecue sauce
1 tablespoon canned chipotle peppers in Adobo sauce, finely chopped*
2 tablespoons cherry preserves

*Easy to find right in the canned vegetable section of your neighborhood grocery store.

Shredded Chicken
4 cups chicken, cooked and shredded
Salt and pepper, to taste
12 miniature hamburger buns, halved

Tip: Skip a few steps by using leftover chicken you have in the fridge, or better yet, pick up a prepared rotisserie chicken at your supermarket.

INSTRUCTIONS
    1. Combine barbecue sauce, chipotle peppers and cherry preserves in a medium-size, microwave-safe bowl and microwave on high heat for 45-60 seconds, or until bubbling.
    2. Place shredded chicken in a separate medium-size bowl. Pour mixture over chicken and toss. Season with salt and pepper to taste.
    3. On a sheet pan or serving platter, fill buns with chicken mixture. Serve warm.
Tip: We love the combination of chipotle peppers and cherries in barbecue sauce, but if you have your own favorite recipe or a bottle on hand, feel free to use it instead.
