Honey Ice Cream in Pine Nut-Rimmed Cones
Serves 4
Prep time: 20 minutes
Freeze time: 1 hour

INGREDIENTS
Ice Cream
10 scoops vanilla ice cream, softened
1 tablespoon honey
1/2 teaspoon ground cinnamon

Cones
4 waffle cones or bowls
4 ounces white chocolate chips
4 tablespoons pine nuts, toasted

INSTRUCTIONS
  1. Line a baking sheet with parchment paper.
  2. Pour the white chocolate chips into a small heat-proof mixing bowl, then place the bowl on top of a saucepan over medium-high heat to create a double boiler. Melt the chocolate until it takes on a smooth texture and silky sheen.
  3. Pour the pine nuts into a shallow dish. Dip the rim of each cone or bowl in the chocolate, then roll in the pine nuts.
  4. Place the cone, dipped side down, on the parchment paper to cool.
  5. In a separate large mixing bowl, combine the ice cream, honey and cinnamon. Place the mixture back in the freezer until hardened, about 1 hour.
  6. Scoop the ice cream into the cones and serve.
Tip: When making your cones, create completely new flavors by playing with different kinds of chocolate and embellishments, like milk chocolate and crushed peanuts or dark chocolate and sprinkles. Yum!

Tip: For an outdoor party, you can display the ice cream and cones separately to create an interactive do-it-yourself buffet!
