    Head to the grill for a savory twist on Caesar salad. The combination of cool, crisp leaves with rich, charred flavor creates for an interesting texture and deepened flavor.

Grilled Caesar Salad

Serves 4

Cook time: 5 minutes

INGREDIENTS
2 heads romaine lettuce
4 slices good quality crusty bread
Olive oil spray
Salt and freshly ground black pepper, to taste
Prepared Caesar dressing
Parmesan cheese, freshly grated

INSTRUCTIONS

    1. Preheat grill to medium-high heat. Cut romaine heads in half lengthwise, leaving the root intact. Remove blemished leaves, gently rinse and pat dry.
    2. Spray all sides of lettuce and bread with olive oil, then season with salt and pepper to taste.
    3. Grill 4 to 5 minutes, turning occasionally until both bread and romaine are grill-marked.
    4. Place romaine halves on salad plates, cut side up, and drizzle with dressing. Sprinkle with additional black pepper and freshly grated Parmesan over each salad. Serve with grilled bread slices.

    Tip: Try including corn in your salad as an added accent. Seafood is also great for contributing depth to the flavor of the salad.
