    With temperatures at all-time highs, prepare an easy, crowd-pleasing salad that can stand up to the summer sun. Begin by combining lots of fresh beans, vegetables and herbs, then perfect the dish with a simple yet sophisticated vinaigrette that you’ll use again and again.

Garbanzo Bean Salad with Dijon Vinaigrette

Serves 4
Prep time: 15 minutes

INGREDIENTS
Bean Salad
1 can (15 unces) garbanzo beans, rinsed and drained
3 hearts of palm, diced
1 jar (7 ounces) roasted red peppers, drained and chopped
1 tomato, diced
1/2 cup whole kernel corn (fresh, frozen or canned)
1/2 red onion, diced
5 basil leaves, chopped
2 tablespoons chives, chopped
3 mint leaves, chopped
1/4 cup Parmesan cheese, grated

Dijon Vinaigrette
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1/4 cup olive oil
1/2 teaspoon salt

Freshly ground pepper, to taste

INSTRUCTIONS
    1. In a large serving bowl, combine all salad ingredients.
    2. In a separate small mixing bowl, whisk together all dressing ingredients.
    3. Pour the vinaigrette over the salad mixture and toss well. Refrigerate until ready to serve.
Tip: Trying to manage your time? You can make this dish days ahead of time—simply keep the salad mixture and dressing in separate bowls in the fridge. Pour the vinaigrette over the salad mixture just before it’s time to serve.
