Mixed Greens with Lemon Vinaigrette
Spring mixed greens are delicious and tender no need to dress them up very much. With the complex flavors of the lamb dish, simple lemon vinaigrette does the job nicely.
1/8 cup lemon juice½ cup extra virgin olive oil½ tsp. Dijon mustard1 clove garlic minced1 tsp kosher salt1/8-tsp. fresh ground pepper
Spring mixed greens for six.
Combine the olive oil, garlic and lemon juice. Slowly add the olive oil whisking vigorously. Add the salt and pepper to suit your taste. Just before serving your dinner, toss the mixed greens with the vinaigrette.
